There's a local tea merchant where I live that has wonderful teas that he markets. He suggested the electric tea kettle that I purchased from him and he also uses it in the store for himself and to give us tea samples. I found it online, here: http://www.nmteaco.com/Digital-Kettle_p_335.html

It's very nice. When you turn it on, it takes the water to boiling and then it reduces it to the temperature which you preset and keeps it there. I turn it on in the morning before going to work, make my matcha, and then when I come back, it's ready for my green tea of choice. My husband, a coffee drinker, uses it to get the right temperature for his coffee.

You mention that your kettle boils then drops down to the specified temperature. I've never liked digital kettles because I thought they only brought the water to the set temp, never boiling it. Has my disapproval of the digital kettle been in vain???!?

But seriously, are digital kettles (for the most part) designed to always boil, then drop the temp?

I have no idea about OTHER digital kettles, but THIS one goes to boiling before lowering to the preset temp. Since my husband, the coffee aficionado, uses it for coffee, he turns it off and then on again so it'll go to boiling before backing up only a few degrees for his coffee. Meanwhile, my preset temp is still in there and it goes down for me after he uses it. Interested?

As electronic and digital as my tea prep tends to be with a scale, thermometer, timer, etc, I have never had an inclination to go for a digital kettle. Though some people swear by them.

I already have an adjustable (loosely defined) kettle, UtiliTea. I have yet to use the adjustable feature after 1000's of uses, leaving it set to boil. I guess I am just a boil and cool kinda guy. 8)

There are 4 types of water heating in japanese tea preparation, in the tea ceremony they use a kama, that is made in yamagata and it is cast iron, activated reduction baked, there is the tetsubin, most are nanbu teki, and yamagata cast iron, and there is the silver kettle, handmade in tokyo from very pure silver, and I have seen nilu type of ceramic side handled kettle on charchoal stoves, unfortunately I use an electric induction kettle, but I am planing to buy a tetsubin.
