I was wondering why so many of the pastry type food items that were imported from Japan were so sweet. I buy them from the Japanese refrigerated section at the Asian market (I think they're shipped frozen). Then I found out they were intended to be consumed before drinking a bowl of matcha, which can be a bit bitter especially when using two scoops to two ounces or so of water.
After reading this I tried eating one before each bowl of matcha and have been doing it ever since. They have various types and I think each is intended to go with either thick or thin style matcha. Most of the ones that I buy have red bean paste or sweet potato filling. I honestly don't find Manten, Kiri No Mori, or Kaoru Supreme to be bitter, but I eat the sweets first anyway.
I don't add anything to tea, but I know someone who adds honey to green tea and claims it tastes great. I can't say you shouldn't add anything because I do like genmaicha, which adds roasted brown rice to sencha or bancha. |

| Dude...a small piece or two of DARK chocolate with any Japanese tea is da bomb! I like simple snacks...dark chocolate is generally not too complicate as far as ingredients go...and I call it my other health food...tea being the first. |

Interesting to hear such strong opinions about this subject! Then again, feelings burn brightest for the things we love best.
I'm something of a maverick I suppose, but I don't mind experimenting with my tea a bit. I've tried allspice and cloves with oolong before though.
okimasa -- I like your idea of coming up with good food pairings for different teas. That question would be worth pursuing!
*laughs* I can't get the image of jalapeño chips and tea out of my head though. Truly terrible combo there.
My favorite food to pair with tea would have to be dark chocolate.
Anyways, I've always come back to enjoying pure tea. There's something elemental about the flavors and the experience.

when i was served sencha at the Ippodo "10 g./4 oz." Teashop in Kyoto they gave me a little japanese jelly-like sweet which i was initially hesitant to eat thinking it would distract from the tea but realized that the sweetness really complimented the intense sencha taste very well, and in general they seem to know what they're doing there.
i personally like to have a tea by itself with a clean palate and don't like to mess around with food pairings or anything at least until i get to know a tea well. it is amazing how much different things can taste when with another food/flavor. |

I've lately been enjoying home-made cinnamon raisin biscotti with tea. I make it with all whole grains and since it isn't sooooo sweet it goes well with the tea.
I also enjoy eating a bit of dark chocolate with matcha...mmmmm, maybe right now would be a good time...
