Well I've been experimenting and brewing green tea almost every day now. I have to say that the Uji Sencha Miyabi is an interesting tea. I've only ever had black teas and found them very unpalatable. I would pretty much only drink them if they were loaded down with sugar and milk.

After some experimenting I think I'm on the right track, but I have an issue and I was hoping to get some more advice.

My first infusion seems to be a bit bitter. My little kyusu holds just under a cup of water. I've been using three standard teaspoons of the Sencha. Water temp is around 165. Steep time is about 1.5 minutes. Now my second and third infusions go around thirty to forty seconds. These come out virtually the same color and consistency, but the flavor is more tea and less bitter. I'm wondering what needs to be adjusted. I was thinking perhaps time, or maybe less leaf.

Any suggestions?

The Uji Sencha Miyabi is one of my favourites! Do you think you may be using too much leaf? A good starting point would be 1 heaping tsp per 240mL (8 fl oz).

Its only my preference, but on the first infusion of Miyabi, I do it for 1min15secs.

For the second infusion just remember that the leaves are open and they give their juice very quickly, so with deep steamed tea pour water and immediately drain into faircup, with uji finished sencha 20 second infusion only, you must have seriosly overbrewed your second infusion, the 30-40 seconds only for the third infusion, and I usually use less time with first infusion to 1 minute, generally that is ok, if you exagerate with one certain brew the subsecvent brew will be lighter the tea is used up faster, I use 1`st 1 min, 2`nd instant pour or 20 sec, 3`rd 30 sec(fukamushi) 40 (normal sencha).
