Hi,
I recently bought a japanese green tea teapot, it holds 11 ounces of water. I wanted to see how much leaf people on this forum would use with this amount of water, and how much they recommend for a nice hearty brew. I ask because i did an experiment with my normal teapot( not made for green tea) where I let the leaves infuse directly into the water and then poured the results into a second teapot through a metal strainer. The result was a very weak, lightly green colored tea. I used two heaping teaspoons for 16 ounces of water. I am concerned that the same thing will happen with my new tokoname teapot. I don't want green tea flavored water, if you know what i mean....... I like it when the tea is a solid green color and has a rich taste (with littles particles floating in it), and would like to know how to get these results with my new teapot which is designed with green tea in mind. Thanks! (also i brew it around 165-170 degrees)

Actually, I'd say you nailed the guidelines. You have the water temp right on the money and I'd agree with you on the amount of leaf. (1 heaping teaspoon per 8 oz, or like you were doing, 2 heaping tsp per 16 oz).

I wont go into adjusting the amount of leaf to you're preference because it sounds like you have some experience with this.

Maybe you're infusion times are a bit too short. Again, its up to your own preference, but a good general guide would be:

1st infusion - 1min15secs
2nd infusion - 30 seconds
3rd infusion - 1 minute

It could also be your tea. You might have something mild, like the Kirameki Shincha. (It was very smooth and elegant!)
