loajoy Uh, Can I Add Sugar?

Hello, just received "Chiyo Mukashi" and it's wonderful. I've made several
cups following instructions EXCEPT didn't use a sifter (hate to loose a spot of it) Do you think if I use a sifter I would get froth? The color is a beautiful veridian dark green.

Hi Loajoy, glad to see you here!
Although it's not absolutely necessary, the sifter does help a bit. You should get a nice froth if the temperature and the amount of water/matcha is right. Have you been pre-warming the bowl and then drying it first? Make sure you do that. If you are not getting the right froth, you may also be adding too much water.
This is one of those things you have to practice with before you get it right. |

I didn't sift mine either. I think it has more to do with water temperature than anything else. I had started by Boiling my water, and used the boile water to warm the bowl, and set the rest aside to cool a bit.
Afer drying the bowl well and putting 2 scoops of Matcha in the bowl the water did sem to be a good temperature and did froth up nicely when i whisked it.
When I first got my order I was unsure about a lot of things since it was my first time making MAtcha. but i followed the directions carefully and asked a few questions here and it came it wonderfully.
I can't stress too much to "WARM THE BOWL" I tried making an Iced MAtcha in my blender and it didn't work right at first, it all clumped badly in the blender. So I now make it hot 1st then pour it into the blender with the soy milk and sweetner. |

If you add matcha to a wet bowl, it can cake on the bottom, and you will not get a good mix. Yes, scraping the bottom of the bowl with you chasen can take care of that, but it will also shorten the life span of your chasen. |

Oh ok, but why warm the bowl? Can't you just take the clean dry bowl from the draw (Or wherever you keep it) and use it straight away? |

I don't know precisely why, but it seems to me that it is easier to brew it this way.
Preheating tea vessels is also a way to better control water temperature. |
