I just received Matcha from O-Cha.com and noticed that it says to store in the refridgerator after opening. Is this just recommended if you plan on having the matcha for 5 to 6 months or should you store it in the fridge regardless of how long it takes you to drink it. I don't want any odors from the fridge to hurt the taste.

I think Kevin will agree, if you are actively drinking it on a regular basis, I would say, no, do not store it in the fridge. Going in and out of the fridge has a lot of pitfalls, including condensation forming on your fragile matcha powder if you were to open it when it is still cold.
If I was not going to use it for an extended period after opening, then I would, but only with the caveat that you do so at your own risk. If I was going to, I would put the tin in several layers of plactic ziplock type bags.
Obviously, it is best to open a new tin of matcha only when you know you will go through it on a regular basis. Long term storage of opened matcha just has too many issues. |

This question came up on another forum, and personally I think that the risks out weigh the benefits. Am I wrong? |

Kevin is away from the tea fields and in the prickly pear fields of Arizona. He will check in, but less than normal...til then, free matcha for all!!!

I drink a lot of matcha and I have always kept it in the refrigerator even after opening the can. However, I keep it in the sealed bin at the bottom and I don't ever keep anything else in there, so I haven't noticed any odors from food. I use either Manten, which is double-sealed, or Kaoru Supreme, which has a screw-on cover. Both have been excellent when stored in the refrigerator. I don't get any lumps with either.
Side note: I just tried a 100 tine whisk for the first time and it produced a great, frothy bowl of Kaoru Supreme with very little effort. The Supreme always comes out great with the 80 tine, but the 100 tine is effortless and the foam a bit lighter. I don't know how long it will last, though, as the tines are pretty thin. |
