Hi,
i brew 20 ozs of daily sencha in a clay pot once a day. i have left the leaves in pot overnight and brewed 2nd pot the next day. the flavor seems fine to me. is this ok to do? i mostly worry about mold/bacteria growing in dark,damp teapot. have considered putting the pot in the fridge overnight, but am afraid this will ruin effect of tea. Should i just brew a new pot each day?

| Oh yeah, you are waiting way too long between the infusions. The leaves start to oxydize within hours. Use half as much and brew it twice - it would be better. |

...not to mention the gunky mess this will make of your clay pot over time.
I try to use the leaves up within a couple hours after the first steeping whenever possible. Many of the higher grade sencha will resteep 4-5 times with practice.
If you follow Kevin's advise, you may find you enjoy the second steep more than the first one, although the everyday sencha is one of the only sencha I have not tried from O-Cha. |

| ok. i drink 20 ozs at one time, but generally only drink that amount once/day. i will just use fresh leaves each day. thanks for the input. |

You wrote above that the taste was still ok - so why to throw the leaves away?
I don't think there will be any mold or bacteria that would warrant that.
(If you always like to have a perfect cup of tea then use fresh leaves but thats another case) |

| I think it's best to brew new leaves each day. The dried tea leaves alone can absorb moisture very fast, in the long term the leave will be rotten. In your case, it's simialar because the leaves are submerged into the water for more than 12 hours. It probably is safer not do to it. You can make the 2ng brew within 2-3 hours, more than 12 hours is too long. |
