| All this talk about shincha lately got me thinking... is there such thing as shincha matcha (or whatever the correct Japanese term would be)? I know gyokuro is aged, but does the tencha leaf also undergo aging or is it ground up right away? |

I just read that matcha is typically aged for many of the same reasons as gyokuro. It is aged in leaf form for up to 6 months +/-. Then it is ground into matcha. It is done this way to prevent deterioration of the powder. So it seems that it is very similar to gyokuro in the aging process.
I am not certain if this is universal for all producers of matcha or not.
So, if this is true, then it would not be available as shincha.
But what about powdered sencha...hmmm??? |
