I remember reading that gyokuro is allowed to age/mature slightly before it is sold. Do shaded senchas go through the same aging process?

..I have read, no. They are sold after harvesting like a regular sencha. That is assuming you are talking about kabuse cha.

I was just thinking about this a few days ago. So, Kevin, does this mean they are available as shincha???

I've never seen kabusecha offered as shincha, but it doesn't mean it's not out there.

It's not aged, brew it like sencha.

One traditional tea shop listed their top grade sencha as "traditionally aged". They did not say if it was shaded though, probably not as kabuse-cha was listed with gyokuro.

We will get the 2007 Kabusecha in around May 10th. I just got a small batch of 2006 kabusecha in today - it's still as good as it ever was.

Gyokuro is aged on purpose. Except for shincha, sencha is stored in refrigerated warehouses and pulled throughout the year as needed. I don't really consider that "aging" in the traditional sense of the word, but yeah, I guess since its older it's "aged."

So Kevin, when you add the 2007 Kabuse cha around May 10th, will it be considered shincha? I noticed in your O-Cha blog, one of your most recent entries mentions the addition of Kabusecha as shincha in May.

Very good, thanx.

So, next question...I have put off preordering the shincha Miyabi hoping to see the shincha Kabuse available for preorder also. I was hoping to order them together if they were both available for preorder.

Oh yeah, the question, any chance of adding the Kabuse cha to the shincha page as a preorder item?
