When trying to review Gyokuro, I didn't know quite how to describe it. Does anybody know what are the official "tastes" that describe different green teas. I've heard vegetal, grassy, and bitter but I'm not sure I'm using it right.

For example what is Gyokuro? What is Sencha? Hojicha?

On another note, anyone out there tried the new gyokuro?

Gautier & Mallet's book "Tea: Aromas and Flavors Around the World" is pretty comprehensive...
