silly question here. i make a big pot (about 3 cups) of green tea to simplify things. but, i like to take my time drinking it so i would like to keep the pot warm while i drink a cup. sometimes, even though i put the pot on the stove at the absolute lowest temp setting, the tea seems to continue to steep because the next few cups come out extremely dark. any way around this? thanks

sorry, should have mentioned that. i have an infusion basket, so i lift that out and the leaves are therefore completely out of the tea pot. doesn't make sense to me either. thanks for the reply.

Japanese green tea seems to react negatively to reheating by discoloring and loss of flavor...or at least modification of flavor. It also oxidizes and turns brownish rather quickly. Kept in an airtight container reduces or slows this but does not eliminate it. Of course you cannot reheat it or even place it on any heat source if you keep it in an airtight container.

You seem to be experiencing symptoms of both.

The only solution I could think of is to use a thermos or a bada-ss teapot, like an English one or a chinese iron kettle.

I bought a Zojirushi thermos and I love it. It keeps tea at a constant temperature for hours. Even if I put it in there at 175 it doesn't drop much.

That might be your best bet.

It seems to me green tea oxidizes faster in higher temps than in lower temps. My iced green tea continues to be green for hours yet when I keep hot tea in my thermos it would quickly oxidize and turn brown in a matter of minutes.

I use an automatic drip to keep the tea warm.
