It's kinda funny actually, during the Holiday season which is usually known for slow delivery, they were like Speedy Gonzalez. Oh well, people are starving in this world, and I'm complaining about not having my tea from Japan delivered in under a week.  |

I have 2 orders coming my way...and unless the mail is too slow, they may arrive this coming week. I swooped on some of the clearance Asi Giri, Otsuusan (new for me), and the Karigani tea bags (also new for me).
I wish I could have waited for the new offering...sounds good...it will give me an excuse to reorder.
Kagoshima green Tea Yutaka Midori
The last few days have been kinda nutz for me to say the least. So, while I did try this regal tea, it was not the way I like to when trying premium sencha. I like to fully focus on the tea. My state of mind was not in the right place to fully assess the goodness of this tea. But tomorrow is another TEAday...I hope to have that out of body experience then. |

......I think I found my "sweet spot" for Yutaki...based on personal taste and my digital thermometer calibration...It took some trial and error to get to this point. This creates a great tea for me and a session that evolves nicely from steep to steep. I would be curious what others are doing with this tea.
1st...168, 110sec...4.25 g/200ml
2nd...172, 30sec...
3rd...178-180, 60 sec. For most sencha I usually go with 40-50 sec for the 3rd steep.
4th...whatever the temp is in the kettle...around 185-190...time matters little at this point...say 5 min.
5th...come back later with boiling water...time seems to be totally irrelevant...i have brewed for 5 min all the way to 60 min with no ill effect...comes out rather sweet and mellow with no bitterness. |

| I think your scale will be particularly helpful with this tea, Chip. I have had a wide range of results with Yutaka Midori. I'm also gettting used to a new Kyusu and that might be a factor. Occasionally I get it just right and it's just a perfect cup. There is no question about the quality of this sencha, that's for sure. I've tried varying temperatures (which also accounts for the different results) and I have noticed that 165-170F seems to work pretty good on the first infusion. I use similar temperatures on subsequent infusions and brew it anywhere from 20 seconds to 1 minute. I usually do 4 infusions. |

Ed, this tea seems to love precision once you get the parameters right...
I really stick with what I am doing with this sencha. It is a really great sencha, just a little particular. Some sencha I can do in my sleep...but this sencha requires more focus ...but the rewards are great. I measure everything...water temp, tea weight, water volume...and of course time...and I preheat everything.
I envy folks who can eyeball all this stuff... |

I just finished my bag of Yutaka Midori the other day. I know this is a coffee term, but it was good to the last drop. I have been trying various teas lately and haven't come across anything remotely like it. This has to be one of the greenest teas you can get. |
