Hello...

I am wondering what the consensus is on how long one can wait in between steeps. I have heard figures as low as 2 hours and as long as 12 hours. I have also heard you can go all day with Gyokuru but not with Sencha which seems odd. I have to wonder if I waited 3 hours instead of 2 would I really know a difference? What is your opnion regarding this issue?

I made me up an 8 ounce pot of asa giri sencha. Consumed the first steep but then had to leave to take care of something. Left the leaves in the pot. Was gone for 4 or 5 hours and when I returned home decided to try it for a 2nd steep. The tea came out superbly and I think I have answered my own question. In my experience at least one can go far longer than 2 hours between steepings with sencha as this 2nd steep is tasting great.
