Just a quick question.
I have been brewing my Yutaka Midori with a water temp of about 153F, well, all my sencha actually, and i have found that if i brew it at 165F or up, it begins to get kinda bitter, has anyone else had this same experience?
PS- my brewing routine is, 1 heaping Teaspoon to 9 oz of 153F water.
1st infusion= 60 seconds
2nd infusion= 10 seconds (I use slightly hotter water for this infusion) |

Your infusions are a little too long. For Yutaka Midori, try 40 seconds for the first infusion, and pour instantly for the second.
165F shouldn't make it bitter, but hotter temperatures (like 190F +) might |

I haven't had yutaka in some time. But 3 grams per 5 ounces at 2 minutes should be good. 165 F.
2nd steep 175 F - 30 secs.
3rd steep 175 F - 60 secs.
Thing is, everyone has different parameters, so try a bunch of set ups and in the end, use what makes the tea taste best to you. |

Interesting. In a preheated kyusu, I brew this a little hotter than most premium sencha. 170* F. I start pouring at 50 sec. I may try it lower.
I increase temp a little for each successive steep. YM is my fav sencha. |

Before i post i would like you all to know that for some reason i feel like i just posted this same message, so if i have, let me know lol.
I tried steeping it at about 165F and it was even better than the way i used to steep it.
(It might be because i got a new thermometer like 1 hour before i brewed the pot but....
