Lately, I've become interested in Unami (the 5th taste), so I'm creating this topic as a place to discuss Unami in Green Tea.

Today, it was really hot in Santa Cruz, so I tried cold brewing some Sencha and noticed that it heightened the unami flavor.

Has anyone else noticed that cold brewing heightens the unami flavor?

I thought it was umami.

Anyways, different green teas seem to have different after tastes. I'm not sure if this is included in umami's definition but I tried.
