Joel asked this question on another forum, and I didn't know what the answer was.
I know there isn't shincha matcha, and I've always had the impression that matcha doesn't follow the same..."rules," for lack of a better word, as sencha when it comes to harvesting the leaves.
Is matcha produced year round? If so, do they use leaves from the spring harvest or any harvest? And of course, do vendors announce when they are stocked with matcha from the current harvest? |

| Matcha is produced year round. In our case, it's made (ground) right around the time we order it so it's very fresh. The tencha leaves used to make matcha iare available to the producers through out the year. |

| Thanks, that is good to know. I will happily be ordering some more o-cha matcha this week. Out of curiosity, how are the tencha leaves available year-round, are they refrigerated or something? |

| They refrigerate just about everything until they are ready to pull it out for final processing, year round. |

| Please tell me, does tea lose it`s aroma, does it get damaged in the process of freezing. I`m sure you know what happens to a cucumber after you put it in the freezer, once it thaws it`s celular system gets damaged and it looks darkes and it gets soft and bad tasting, but if you put the cucumber in liquid nitrogen, it does not get damaged because the freezing is instantanious, I wonder if this applys to tea as well? |
