| A rival site is selling shincha aracha, farmers tea, it`s said that it contains stems as well and is not completely dried out, and it is very good and fresh, somebody tell me if you have enjoyed such tea, and what is your opinion? |

Oni, I am getting the impression, that the last drying process is kept to a minimum for some shincha's. And this is the reason they taste so potent. (The one you're referring to may not go through the process at all)
But, sencha that is planned to go into cold storage, the drying is not kept to a minimum, but instead is done in a more standard way.
So, it may be the case, that all shincha have a minimum drying in the last of the process.
Though, Hatsumi stands out in my mind as really potent, and the other shincha's from o-cha didn't seem to give me that impression to the same degree. So it may vary from tea to tea how much they minimize the drying process.
Bottom line: it appears that shincha is processed a little different than non-shincha. Accounting for its stronger flavor. |

Not to mention super fresh...within days of picking if you get it right away. |

Aracha, often sold as Farmers' Tea, is how the vast majority of Japanese tea is cold stored. It has not gone throught the final sorting process.
I have read the name is derived from the fact tea farmers would drink this first, since after all it is drinkable before final processing which would delay their tasting of the newest harvest til the sorting could take place.
Perhaps shincha aracha is also dried less as well, not sure on that. Perhaps when the sorting takes place a final drying to freshen the tea also takes place.
Applying a quick heating/drying can freshen a tea. |

Shincha updates...
Hatsumi - being harvested and processed as we speak, should have it in 4 days or so.
Fukamushi Supreme - Before May 1st.
Kirameki - May 1st.
Yutaka - early May.
Miyabi - mid May. |

I've got even better news for you....
Our supplier says that while some years are better than others, for this particular item, this year is one of the best they have ever had. I have yet to open a package to try it, I may do that tonight.
By the way, we started shipping those today. |

Excellent! I Ordered the deep-steamed Supreme and a bag of Hatsumi. I am really looking forward to opening them and brewing a cup.
I want some Miyabi too but I just couldn't wait any longer. I'll have to order it separately when it comes out. |

Patience, Chip-San. The Kirameki is hand picked cha from Uji. The best japan has to offer. It holds up nothing... Thing again. |
