peachy Uh, Can I Add Sugar?

I have all this lovely green and white tea (and some pu erh...regular black is too caffeinated for me) which I look upon longingly in the hours before it's time to sleep. I do have some caffeine-free options, such as decaf green, rooibos, chamomile, sage, lapacho, and various other herbals. I wouldn't mind trying some new varieties, though, so...
What are your favorite non-caffeinated steeped beverages? ^_^ |

3rd, 4th, and 5th steeps of Yutaka Midori...
There are a lot of relaxing herbals such as mints...I try to keep it simple and avoid orverly complicated blends that inevitably have something in it I do not like.
Karigane is reported to have reduced caffeine, but I cannot say whether I totally believe that or not. |

My favorite is citrus ginger tea. I take finely grated fresh ginger root, about 1 heaping teaspoon per mug serving(a little over 5ml), and steep it with water that was brought to a rapid boil. Steep for about 5 minutes. Strain and pour into a cup, then add a squeeze of fresh lemon or lime. If you need sweet, add honey to taste.
I like ginger after a meal, since it really seems to help settle the tummy, as the herbalists say. Fresh ginger has a real bite to it. If you are into intense flavors, using fresh ingredients for herbal teas is the way to go. |

I agree with Chip, I like mint. That said, I don't really drink it much, as caffeine doesn't bother me too much.
Also, I don't know about karigane, but I hear houjicha is supposed to be low in caffeine due to being roasted. |

Great ideas! Mmm ginger... that sounds lovely.
2nd (and on) steepings have no caffeine? I'd heard that it was the initial steeping that contained all the caffeine, but was always too nervous to try it out... I mean I'm the girl who's kept up by kukicha and houjicha, LOL. |

There is a lot of debate over that peachy!!!
I think the second still has a bunch, but it gets less and less with each steeping. IMHO.
OH, Blue Stem, I love fresh grated ginger and use it for many things. A little off the subject, but it is incredible in cooking. People are amzed when they taste what fresh ginger tastes like in food. |

IMO there is no substitute for fresh ginger in cooking; I'll leave it out before I'll use powdered ginger. Fresh, uncooked ginger is also a great addition to dipping sauces.
High quality candied ginger, although not fresh, is good for mixing with vanilla ice cream to make it into ginger ice cream. It can also help beat a cold if consumed in large quantities immediately after the cold's first signs show up. This method of cold-killing may, however, be too much for many stomachs. |

| If you like roasty flavors, I really like mugicha (or boricha) which is just roasted barley kernals. It sounds kind of strange but you just use boiling water and let it sit for about 10 minutes and it makes a really good caffeine free tisane, especially for winter. And apparently its really popular iced in Japan too. |
