Matcha BowlI am a new member to this list from the United States. I have recently started drinking matcha tea and love it! I would like to know the proper temperature of the water should be to benefit the most flavor from matcha tea? Also what is the preferred brand of water to use? Thank you.

There's not really any set temperature for matcha, it doesn't seem to be as fussy about temperature as loose leaf tea. I usually make mine at around 80 C (176 F), and judge it based on how the resulting bowl turns out. Likewise with the water - any good water will work just fine.

From someone new to Matcha who is used to putting a tea kettle on the stove and waiting for it to whistle.

Ok so about 176 degrees? can you suggest a reliable way to achieve this?
I know that bad things can happen if the water is too hot right?

If I boil the water, about how long should I allow it to sit or perhaps some other way? would say something like a Mr. Coffee Machine do it? I knwo that it doesn't boil the water.

The temperature for matcha is not nearly as critical as it is for loose leaf. Heat it in a kettle until it just starts to boil and then remove from the heat. Make sure to pre-heat and then dry the bowl - many people make the mistake of not doing that first. Then use the hot water again, it should be fine.

I find that I am a stickler when it comes to water temperature for matcha. I bought a thermometer that has a long metal prong on the end and put it in the water. When it reaches 80°C, I immediately pour it into a warmed bowl with the matcha powder and whisk away. Just my opinion, but I'm always afraid of getting the water too hot and ruin the bowl. Very Happy I have a metal electric water pot that I use but you can purchase inexpensive plastic kettles that work fine also and you can keep the water simmering if you care for another bowl Razz

I actually Have a Ceramic Chinese Teapot that a Friend got me many years ago when I had a back injury, she took me to a Chinese Dr. downtown LA (Chinatown) and bought the pot for me to brew the Gawd Awful tasting mixture that was prescribed to me. (The brew worked well) but I haven't actually used the pot since then.

I guess its like anything else, I am going to have to experiment until I get it just right.
